Jamaica Roasted Chicken/ RedStripe Beer


Jamaica Roasted Chicken/Red Stripe Beer 

INGREDIENTS:

4 Lbs. Chicken

2 lg. onions

1/4 lb. scallion

2 sprigs thyme 

4 ozs. soya sauce

2 ozs. sugar

3 cloves garlics

2ozs. allspice/pimento

1/2 cup red stripe beer

1/2 tsp. salt

2ozs.coconut oil

1sm. scotch bonnet pepper

1/2 cup vinegar

1oz. browning

1pk. aluminum foil

Method:

1. Combined all season with (1/4) cup red stripe beer in blender and blend until smooth. 

2. Trim and wash chicken both in and out with solution of water and vinegar.

3. Thoroughly season chicken with blended seasons both in the cavity and out, and allow to

     marinate for 30mins.

 4. Brush baking sheet with oil, place chicken on a rock and put on sheet,

    cover with foil paper.

5. Heat oven at 360-degree Fahrenheit for 15mins.

6. Place chicken oven to roast for 30mins then remove foil and base with sauce.

7.Replace chicken in oven and allow to get its golden color.  for another 10-15mins.

8. Remove from oven and serve.

Sauce:

Ingredients:

1/4 cup Jamaica red stripe beer

1/4 cup fresh pineapple cut into cubes.

1oz.  brown sugar

4ozs. dripping from roasted chicken

2 ozs. corn starch 

Method: Bring the all the ingredient to a 15 min simmer in a saucepan, then thicken with cornstarch

Serve.
