CHRISTMAS PUDDING JAMAICA STYLE

 

Christmas pudding
RECIPE 

1lb sugar [granulated optional]

1lb butter [anchor optional]

8oz browning

5oz vanilla essence 

2oz almond essence 

1 small nutmeg

3oz cinnamon 

mixed spices 

4oz rose water

1/2 teaspoon salt

1doz eggs

11/2lb baking flour

1tbsp baking powder

8 cups-soaked mixed fruits [raisins, currants, prunes, cherries, dates and chopped almond [ optional]

2 cups port wine or red label wine

1/2cup white rum

Method:

  • Brush baking tins with oil or line tin with grease paper.
  • Whisk butter and sugar until smooth and fluffy. 
  • Add all liquid ingredients.
  • Chopped all the mixed fruits slightly add to the cream batter along with all combine dry ingredients alternately.
  • Remove egg eyes, and add to batter alternately after dry ingredients, using the cut and fold method.
  • Add the rum and wine ensuring all ingredients are equally, evenly dissolved.
  • Pour out in a baking tin of your choice.
  • Steam by adding it to a bath of water for approx. 2hrs
  • Check by testing for doneness. remove and cool.
  • Serve.
